The first Metodo Classico produced in the Monferrato Casalese, a gift of magnificent terroir and unique caves throughout the region. Elegance, sapidity and a crisp perlage are the signature of our Metodo Classico from Pinot Nero and Chardonnay grapes, aged strictly sur lie in the Castle's underground caves for a minimum of 48 months.

Organoleptic Characteristics

Appearance: Brilliant golden straw yellow, with fine and persistent perlage

Nose: Citrusy aromas of tangerine and yuzu, with notes of jasmine, exotic fruit, limestone and elegant fresh lees.

Taste profile: Harmonious, richly perlage and particularly intriguing, with citrus notes complemented by savoriness and hints of bread crust and leavened pastries.

Serving suggestions

Food pairings: Perfect match with appetizers to creamy seafood, pasta to roasted fish and aged cheese.

Serving temperature: 8 — 10 °C

Vinification

Harvesting and white vinification in stainless steel vats. Metodo Classico secondary fermentation takes place in the bottle for a minimum aging of 48 months in underground caves. Extra Brut dosage of 3.5 g/L.
